Its my Birthday!


... but I don't feel much like celebrating. Having a big birthday celebration this year just doesn't feel right with all that's going on just along the road in Christchurch. Even though I could have given lots of birthday present hints this year for the first time in ages, I asked my family to donate money to the Red Cross Earthquake fund instead of giving me presents... it just felt like the right thing to do.

What I will have this year is a great day with my little family and a delicious birthday cake!

I used to be pretty proud of my chocolate cakes. They were famous among our group of friends in the Netherlands and the one year that I didn't have time to make a cake for hubby's birthday party there was almost a full out revolt!

I used to use the Be-ro Book Milk Chocolate Cake (the British equivalent of the Edmonds cookbook) but, I have recently discovered THE ULTIMATE CHOCOLATE CAKE!... SO easy, so moist, so delicious and so versatile (you can make cupcakes, 2 small cakes or 1 big cake depending on your mood!) I must admit that I used my usual icing recipe instead of making ganache as recommended in the recipe.

Can't wait to blow out the candles (with the help of Rascal) and get my teeth into this yummy cake!

... and the best bit is that there is another one of these beauties in the freezer :-)
